Description
Delicious and low-carb Crispy Keto Blueberry Cream Cheese Roll-Ups made with zero-carb tortillas, fresh blueberries, and a creamy blend of cream cheese and Greek yogurt, air fried to golden perfection for a quick and satisfying keto-friendly snack or breakfast.
Ingredients
Roll-Ups
- 6 Zero-Carb Small Keto Tortillas
- 1/3 cup Fresh Blueberries
Cream Cheese Filling
- 6 ounces Cream Cheese
- 2 tbsp Plain Greek Yogurt
- 1 tsp Vanilla Extract
- 3 tbsp Swerve Confectioner's Sugar Substitute (plus additional for dusting)
Finishing
- 2 tbsp Butter (melted)
Instructions
- Preheat Air Fryer: Preheat your air fryer to 375 degrees Fahrenheit to ensure even and crispy cooking.
- Prepare Cream Cheese Mixture: In a mixing bowl, combine the cream cheese, plain Greek yogurt, vanilla extract, and 3 tablespoons of Swerve Confectioner's sugar substitute. Blend until smooth and creamy with no lumps.
- Spread Filling: Lay each zero-carb keto tortilla flat and spread a layer of the cream cheese mixture down the center of each one evenly.
- Add Blueberries: Place fresh blueberries on top of the cream cheese layer, distributing them evenly for each roll-up.
- Roll Tortillas: Carefully roll each tortilla closed around the filling. Place each roll-up seam side down onto a well greased pan or directly on the air fryer rack to keep them secure during cooking.
- Brush with Butter: Brush the tops of the roll-ups generously with the melted butter to help create a crispy, golden exterior.
- Air Fry: Cook the roll-ups in the air fryer at 375 degrees for 8 to 10 minutes, or until the outside is browned and crispy to your liking.
- Dust and Serve: Remove from the air fryer and lightly dust with additional Swerve confectioner's sugar substitute before serving for a touch of sweetness.
Notes
- You can substitute fresh blueberries with frozen, just thaw and drain excess moisture before use.
- If you don't have an air fryer, these roll-ups can be cooked in an oven at 375°F for about 10-12 minutes on a baking sheet.
- Use full-fat cream cheese and Greek yogurt for the best texture and taste.
- Adjust sweetness to taste by modifying the amount of Swerve used.
- Ensure tortillas are zero-carb or very low-carb to keep the recipe keto-friendly.
