Ingredients

Tofu Marinade

  • 14-ounce package extra firm tofu (drained and pressed)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon tamari
  • 1 tablespoon water or vegetable stock

Coating

  • 3 tablespoons cornstarch
  • 3 tablespoons za’atar seasoning
  • ½ teaspoon sea salt


Instructions

  1. Prepare the tofu: Cut the pressed extra firm tofu into approximately 1-inch cubes and place them in a shallow dish or bowl to prepare for marinating.
  2. Marinate the tofu: In a small bowl, whisk together apple cider vinegar, tamari, and water or vegetable stock. Pour this mixture over the tofu cubes and let them marinate for about 30 minutes, tossing occasionally so all sides absorb the marinade evenly. For deeper flavor, optionally marinate for several hours in the refrigerator.
  3. Preheat the oven: Set your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  4. Coat the tofu: In a shallow dish, combine cornstarch, za’atar seasoning, and sea salt. Toss the marinated tofu cubes in this mixture ensuring each piece is fully coated for maximum crispiness and flavor.
  5. Bake the tofu: Arrange the coated tofu cubes evenly on the prepared baking sheet. Bake in the oven for 30 minutes, flipping every 10 minutes to ensure all sides brown evenly and the tofu becomes golden and crispy.
  6. Cool and serve: Remove the tofu from the oven and allow it to cool for about 10 minutes. The cooling process will firm up the tofu, providing a denser and chewier texture. Serve as desired.

  • Pressing the tofu thoroughly before marinating helps remove excess moisture and improves the texture.
  • Za’atar seasoning is a blend of herbs and spices, commonly including thyme, oregano, sumac, and sesame seeds; you can adjust the amount based on your taste preference.
