Description

This White Chocolate Cranberry Pecan Fudge is a rich, creamy treat combining sweet white chocolate, tart dried cranberries, and crunchy toasted pecans. Quick to prepare and perfect for gifting or holiday celebrations, this fudge offers a delightful balance of flavors and textures in every bite.

Ingredients

Fudge Base

  • 3 1/2 cups high-quality white chocolate (Ghirardelli bars or white chocolate chips)
  • 14 ounces sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Add-ins

  • 1 cup dried cranberries
  • 1 cup toasted pecans (coarsely chopped)

Instructions

  1. Toast Pecans: Preheat your oven to 350°F (175°C). Spread pecans on a baking sheet and toast them for 8-10 minutes until they emit a nutty aroma. Remove from oven and let them cool before roughly chopping.
  2. Prepare Baking Pan: Line an 8x8- or 9x9-inch square baking pan with parchment paper or foil, creating a sling for easy fudge removal. If using foil, lightly butter or spray it with cooking spray to prevent sticking.
  3. Melt White Chocolate: In a large microwave-safe bowl, combine white chocolate and sweetened condensed milk. Heat in the microwave for 60-90 seconds, stirring every 30 seconds until melted and smooth. Alternatively, melt them together using a double boiler over simmering water.
  4. Mix Ingredients: Stir in vanilla extract, salt, dried cranberries, and toasted pecans immediately into the melted white chocolate mixture.
  5. Set the Fudge: Pour the mixture into the prepared pan and spread evenly. Allow the fudge to cool completely at room temperature or refrigerate for at least 4 hours until firm.
  6. Cut and Store: Once set, cut the fudge into 20 to 25 pieces. Store in an airtight container at room temperature or refrigerate for longer freshness.

Notes

  • Use high-quality white chocolate for the best flavor and texture.
  • Toasting the pecans enhances their flavor and adds a nice crunch.
  • You can substitute walnuts for pecans if preferred.
  • For a firmer fudge, chill it in the refrigerator.
  • Store fudge in an airtight container to maintain freshness.
  • Allow fudge to come to room temperature before serving for a softer bite.
