Description

This Vegan Mushroom Gravy is a rich and savory sauce perfect for enhancing your favorite dishes. Made with sautéed mushrooms, shallots, garlic, and a blend of herbs, this gravy is thickened with flour and enriched with vegetable broth and soy sauce for a umami-packed, dairy-free, and plant-based delight. It’s ideal for holiday meals, mashed potatoes, or as a flavorful topping for roasted vegetables.


Ingredients

Vegetables & Aromatics

  • 3 Tablespoons vegan butter (or olive oil)
  • 2 shallots, diced
  • 6 cloves garlic, minced
  • 10 ounces mushrooms, sliced (cremini recommended)
  • Fresh herbs (optional, for garnish - thyme, rosemary, oregano, etc.)

Spices & Seasonings

  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried thyme (or 1-2 teaspoons fresh thyme)
  • 1/4 teaspoon ground black pepper
  • 2 Tablespoons soy sauce

Thickening Agent & Liquids

  • 2 Tablespoons all-purpose flour
  • 2 1/2 cups vegetable broth (can vary between 2 to 3 cups depending on desired thickness)


Instructions

  1. Prep the Vegetables: Dice the shallots, mince the garlic, and slice the mushrooms as preparation for cooking. Set aside.
  2. Sauté Aromatics: Heat the vegan butter in a pan. Once melted, add the diced shallots and minced garlic. Sauté for about 3 minutes until they become translucent and fragrant.
  3. Cook the Mushrooms and Spices: Add the sliced mushrooms along with dried parsley, dried thyme, and ground black pepper to the pan. Stir and sauté on medium heat for 10-15 minutes until mushrooms release their juices and begin to brown and crisp.
  4. Add and Toast Flour: Sprinkle the flour over the mushrooms in the pan, stirring thoroughly to coat them. Continue cooking for an additional minute to toast the flour and eliminate any raw taste.
  5. Add Broth and Soy Sauce: Pour in the vegetable broth and soy sauce, stirring continuously to combine and dissolve any lumps of flour. Adjust broth quantity to desired gravy thickness, using 2 to 3 cups.
  6. Simmer and Thicken: Cook the gravy for another 5-10 minutes while stirring occasionally, allowing it to thicken. Keep in mind it will thicken more as it cools.
  7. Garnish and Serve: Remove from heat and top with fresh herbs such as thyme or oregano if desired. Serve warm as a delicious accompaniment to your meal.

Notes

  • For a thicker gravy, use 2 cups of vegetable broth; use up to 3 cups if you prefer a thinner consistency.
