Ingredients

Cookie Dough Layer

  • 170 grams Unsalted butter (just melted and cooled for 5 minutes)
  • 180 grams Light brown sugar
  • 120 grams White sugar
  • 1 Egg
  • 1 Egg yolk
  • 1 tbsp Vanilla extract
  • 260 grams Self-raising flour
  • ¼ tsp Salt
  • 180 grams Dark chocolate chips

Oreo Layer

  • 25 Original Oreos

Brownie Layer

  • 150 grams Butter (melted)
  • 100 grams Brown sugar
  • 125 grams White sugar
  • 1 tsp Vanilla extract
  • 2 Eggs (free range, XL)
  • 60 grams Self-raising flour
  • 60 grams Cocoa powder (Dutch process)
  • 100 grams Dark chocolate chips

Instructions

  1. Preheat Oven: Heat your oven to 180°C/350°F/160°F fan-forced to prepare for baking the bars.
  2. Melt Butter: Heat butter in the microwave until just melted, then set it aside to cool for 5 minutes.
  3. Prepare Pan: Grease your brownie pan and line it with baking paper for easy removal.
  4. Mix Cookie Dough Base: In the bowl of a stand mixer, combine the cooled melted butter with light brown and white sugars until well blended.
  5. Add Eggs and Vanilla: Add the egg, egg yolk, and vanilla extract to the sugar mixture and beat on medium-high speed for 5 minutes until light and creamy.
  6. Incorporate Dry Ingredients: Stop the mixer, add self-raising flour and salt, then beat until almost combined.
  7. Add Chocolate Chips: Remove the bowl from the mixer and fold in the dark chocolate chips gently with a wooden spoon or spatula, avoiding overmixing.
  8. Layer Cookie Dough: Scoop the cookie dough into the prepared pan and spread it evenly.
  9. Arrange Oreos: Place 25 original Oreo cookies flat and evenly across the cookie dough layer.
  10. Prepare Brownie Batter: In a large bowl, whisk together melted butter, brown sugar, and white sugar.
  11. Add Eggs and Vanilla: Whisk in the eggs and vanilla extract for about 2 minutes until combined.
  12. Add Dry Ingredients: Combine self-raising flour and Dutch process cocoa powder, then fold into the wet ingredients until almost combined.
  13. Add Chocolate Chips: Fold in the dark chocolate chips gently.
  14. Layer the Brownie Batter: Carefully spread the brownie batter over the Oreo layer, taking care not to dislodge the cookies.
  15. Bake: Bake the assembled layers for 50 minutes in the preheated oven.
  16. Cool: Remove the pan from the oven and allow the brownies to cool completely in the pan before slicing.

Notes

  • Use Dutch process cocoa powder for a smoother, richer chocolate flavor in the brownie layer.
  • Ensure the butter is just melted and cooled to prevent cooking the eggs when mixing.
  • Do not overmix the cookie dough once the flour is added to maintain a tender texture.
  • Allow brownies to cool fully before cutting to ensure clean slices and to let the layers set properly.
  • You can line the pan with parchment paper extending over the edges for easier removal of the bars.
