Instructions
- Prep: Preheat your oven to 400°F (200°C). Begin by cooking the dried tortellini for half the time recommended on the package to keep them firm enough for baking.
- Butter the dish: Lightly butter a casserole dish; choose either a round one about 8 inches (20 cm) across or a rectangular dish approximately 10 x 7 inches (25 x 18 cm).
- Layer the ingredients: In the buttered casserole dish, spread half of the cooked tortellini in the bottom. Add half of the fresh spinach evenly over the pasta, then sprinkle half of the shredded cheese on top. Repeat the layers with the remaining tortellini, spinach, and cheese. Sprinkle the chili flakes evenly over the top layers.
- Add the cream: Pour the heavy cream gently over the layered ingredients, trying to distribute it as evenly as possible to help meld the flavors and cheese during baking.
- Bake: Place the casserole dish in the middle of the preheated oven and bake for about 15 minutes, or until the cheese has melted and turned slightly golden, and the casserole is mostly set.
- Serve: Remove from oven and serve warm, either on its own or paired with a fresh salad for a complete meal.

- Fresh or frozen tortellini can be used; adjust the boiling time accordingly, usually fresh tortellini requires less cooking time, frozen tortellini should be cooked until just tender before layering.
- You can substitute half and half for heavy cream for a lighter version, though the casserole will be less rich.
- Any good melting cheese works well — mozzarella, fontina, or a mild cheddar are excellent options.
