Instructions

  1. Cook the tortellini: Boil the cheese tortellini according to the package instructions until al dente. Once cooked, drain and rinse briefly under cool water to stop the cooking process and slightly cool the pasta.
  2. Prepare the salad ingredients: While the tortellini cooks, halve the cherry tomatoes, chop the spinach and basil, and mince the garlic cloves. Set all these ingredients aside.
  3. Combine salad components: Place the cooked tortellini in a medium to large bowl. Add the chopped spinach, halved cherry tomatoes, mozzarella pearls, fresh basil, and minced garlic. Pour over the olive oil and balsamic vinegar, then sprinkle the Italian seasoning, salt, and pepper. Toss everything well to coat evenly.
