Description

This TikTok Lasagna Soup is a comforting and hearty twist on traditional lasagna, delivering all the classic flavors in a warm, easy-to-make soup. Made with lean ground beef, Italian seasonings, marinara sauce, diced tomatoes, and broken lasagna noodles, it is simmered in a rich broth and finished with creamy cottage cheese, parmesan, mozzarella, spinach, and fresh basil for a delicious, family-friendly meal ready in about 40 minutes.

Ingredients

Main Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 lb lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 jar marinara sauce (24 oz, Rao's preferred)
  • 1 can diced tomatoes with juices (14.5 oz)
  • 1/4 cup water
  • 10 oz lasagna noodles, broken in half

Dairy & Greens

  • 1 1/2 cups cottage cheese
  • 1/2 cup shaved parmesan
  • 1/2 cup shredded mozzarella cheese
  • 1 cup chopped spinach
  • 1/2 cup additional cottage cheese (for serving)
  • 2 tbsp chopped fresh basil (for garnish)

Instructions

  1. Sauté Aromatics: Heat olive oil in a large sauce pot or Dutch oven over medium heat until fragrant. Add the diced onion and minced garlic, cooking and stirring for 3-4 minutes until softened and aromatic.
  2. Cook Ground Beef: Add the lean ground beef to the pot and break it apart with a spoon. Cook for 4-6 minutes until no longer pink, stirring occasionally to ensure even cooking.
  3. Season Beef: Stir in Italian seasoning, salt, pepper, and tomato paste, coating the beef mixture evenly. Continue cooking for about 1-2 minutes to let flavors develop.
  4. Add Liquids: Pour in the beef broth, marinara sauce, diced tomatoes with juices, and water. Stir well to combine all ingredients thoroughly.
  5. Cook Pasta: Break the lasagna noodles in half and add them to the pot, ensuring they are submerged in the liquid. Cover the pot with a lid and bring to a boil. Let it cook for 12-15 minutes, or until the noodles are tender, adjusting time based on noodle brand/type.
  6. Incorporate Cheese and Greens: Stir in the cottage cheese, shaved parmesan, shredded mozzarella, and chopped spinach. Allow the soup to sit for a few minutes until the spinach wilts and cheese melts slightly.
  7. Serve: Ladle the soup into bowls and top each serving with a dollop of the additional cottage cheese and sprinkle with chopped fresh basil. Serve warm and enjoy the rich, creamy flavors reminiscent of classic lasagna.

Notes

  • Use broken lasagna noodles to mimic traditional lasagna texture in soup form.
  • Adjust salt and seasoning to taste based on the saltiness of the broth and marinara sauce used.
  • To make it vegetarian, substitute ground beef with cooked lentils or plant-based meat alternatives and use vegetable broth.
  • Fresh basil added at the end brightens and enhances the overall flavor.
  • This soup reheats well and tastes great the next day as flavors meld.
