Description

Ingredients

Meat and Seasoning

  • 1 lb. ground beef (or ground sausage, or half and half)
  • 1 packet taco seasoning (1 oz.)
  • 1/2 red onion, diced

Pasta and Vegetables

  • 8 oz. elbow macaroni
  • 1 can corn kernels (10 oz., drained)
  • 1 can Rotel (10 oz.)

Liquids

  • 1 cup water
  • 1 cup beef broth (or water)

Optional Toppings

  • 3/4 cup shredded cheddar cheese
  • Doritos, crushed (for topping)
  • Sour cream (for serving)
  • Avocado slices (for serving)


Instructions

  1. Cook the meat and onion: In a large, deep skillet over medium heat, sauté the ground beef with the diced red onion until the meat is fully browned and the onion is softened. Drain any excess fat if necessary. Stir in the taco seasoning and continue sautéing for another 2 to 3 minutes to blend the flavors.
  2. Add pasta, vegetables, and liquids: To the skillet, add the drained corn, the can of Rotel, uncooked elbow macaroni noodles, water, and beef broth. Stir everything well to combine evenly. Increase the heat and bring the mixture to a boil.
  3. Simmer until cooked: Once boiling, cover the skillet and reduce the heat to low. Allow to simmer gently for 10 to 12 minutes, or until the macaroni is tender and cooked through. Stir occasionally to prevent sticking.
