Description
These flavorful Taco Cups are a fun and easy twist on traditional tacos, perfect as a party appetizer or a quick weeknight dinner. Wonton wrappers are used as crispy cups filled with seasoned ground beef, diced tomatoes, and cheddar cheese, baked to golden perfection and topped with fresh sour cream, green onions, and diced tomatoes.
Ingredients
For the Meat Filling
- 2 teaspoons olive oil
- 1 pound ground beef (90% lean)
- 2 tablespoons taco seasoning
- Salt to taste
- 1 (14 ounce) can petite diced tomatoes, drained
For the Cups
- 24 wonton wrappers
- 1 1/4 cups shredded cheddar cheese
- Cooking spray
Toppings
- 1/2 cup sour cream
- 1/4 cup sliced green onions
- 1/4 cup diced fresh tomatoes
Instructions
- Preheat and Prepare Pan: Preheat the oven to 400 degrees Fahrenheit. Lightly coat a 12-cup muffin tin with cooking spray to prevent sticking.
- Cook Ground Beef: Heat olive oil in a large pan over medium-high heat. Add the ground beef, breaking it up with a spatula as it cooks. Stir in taco seasoning and salt to taste, remembering that taco seasoning may contain salt.
- Add Tomatoes: Cook the meat for 4-5 minutes until fully browned and no pink remains. Stir in the drained petite diced tomatoes and mix evenly with the meat.
- Prepare Wonton Cups: Place one wonton wrapper into the bottom of each muffin cup, gently pressing to form a cup shape.
- First Layer Filling: Spoon about 1 tablespoon of the meat mixture into each wonton cup, then sprinkle approximately 2 teaspoons of shredded cheddar cheese on top.
- Second Layer: Add a second wonton wrapper over the cheese layer in each cup. Then evenly distribute the remaining meat mixture and cheese atop these wrappers.
- Bake: Bake in the preheated oven for 10-15 minutes, or until the wonton edges are golden brown and the cheese is melted and bubbly.
- Top and Serve: Remove from oven, top each taco cup with a small dollop of sour cream, then sprinkle with sliced green onions and diced fresh tomatoes for a fresh finish. Serve immediately.
Notes
- You can customize the seasoning by adding extra spices like cumin or chili powder for a spicier kick.
- For a lighter version, use reduced-fat cheese and lean ground turkey instead of beef.
- Ensure the wonton wrappers are sealed gently to maintain the cup shape during baking.
- These taco cups are great for meal prep; store leftovers in an airtight container in the refrigerator and reheat before serving.
- Feel free to add other toppings like avocado, jalapeños, or salsa for extra flavor.
