Description

Delight in these creamy and refreshing Strawberry Yogurt Popsicles, a perfect treat for warm days. Made with fresh strawberries, Greek yogurt, cream cheese, and a hint of honey and vanilla, these popsicles are easy to prepare and provide a healthy, satisfying snack with a smooth texture and natural sweetness.

Ingredients

Fruits

  • 1 cup strawberries, washed, dried, and hulls removed

Dairy & Alternatives

  • 1/2 cup plain or vanilla Greek yogurt
  • 2 oz. light cream cheese
  • 1/2 cup milk (regular or almond milk)

Sweeteners & Flavorings

  • 1 tablespoon honey
  • 1 teaspoon vanilla extract (if using plain Greek yogurt)

Instructions

  1. Blend Ingredients: Combine the strawberries, Greek yogurt, light cream cheese, milk, honey, and vanilla extract (if using plain Greek yogurt) in a blender. Puree until the mixture is completely smooth and creamy.
  2. Pour into Molds: Carefully pour the blended mixture into popsicle molds, or alternatively, into four to six paper or plastic cups suitable for freezing.
  3. Insert Sticks and Freeze: Insert popsicle sticks into each mold or cup to serve as handles for the popsicles.
  4. Freeze Until Firm: Place the molds or cups in the freezer and allow them to freeze completely for 4 to 6 hours, or until they are solid and fully set.

Notes

  • You can substitute almond milk or any preferred milk alternative to make the recipe dairy-free.
  • Adjust the amount of honey according to your sweetness preference or omit it for a less sweet version.
  • Using vanilla Greek yogurt eliminates the need for added vanilla extract.
  • To easily release popsicles, dip molds briefly in warm water before removing.
  • This recipe yields 6 servings, ideal for a small gathering or family treat.
