Strawberry Yogurt Bites are a delightful and refreshing no-bake treat combining creamy Greek yogurt, fresh strawberries, and a chocolate base. Perfect for a healthy snack or light dessert, these bite-sized delights freeze into perfect portions that are easy to enjoy on the go or at home.
Ingredients
Chocolate Base
- 1 cup milk chocolate melting wafers or chocolate chips (such as Ghirardelli milk chocolate melting wafers)
Yogurt Mixture
- 1 cup plain Greek yogurt
- 1 tablespoon honey, to sweeten (optional)
- 1 cup chopped fresh strawberries
Instructions
- Prepare the muffin pan: Line a 24-count mini muffin pan with paper liners or use a silicone muffin pan to prevent sticking and make removal easier.
- Melt the chocolate: Place the milk chocolate melting wafers or chips in a medium microwave-safe bowl. Microwave over medium power in 30-second intervals, stirring between each, to prevent burning. Continue until smooth and fully melted.
- Create the chocolate base: Spoon roughly 1 tablespoon of the melted chocolate into the bottom of each muffin mold. Place the pan in the refrigerator or freezer for 5–10 minutes to let the chocolate harden slightly. It doesn’t need to harden completely at this stage.
- Prepare the yogurt mixture: While the chocolate chills, add the plain Greek yogurt to a medium bowl. Stir in honey to sweeten, if desired, and mix until well combined. Gently fold in the chopped fresh strawberries for a burst of flavor and texture.
- Assemble the bites: Spoon about 1 tablespoon of the yogurt and strawberry mixture on top of each slightly hardened chocolate cup, spreading evenly.
- Freeze to set: Place the assembled muffin pan in the freezer and chill for 2 to 3 hours, or until the yogurt bites are completely frozen and set.
- Serve: When ready to enjoy, remove the yogurt bites from the molds by peeling off the liners or gently popping them out of the silicone molds. Allow to thaw for a few minutes if you prefer a softer texture before serving.
Notes
- Use silicone molds for easier removal if you have trouble with paper liners.
- Substitute honey with maple syrup or agave for a vegan option, and use dairy-free yogurt to make it fully vegan.
- These bites can be stored in an airtight container in the freezer for up to one month.
- To add variety, you can swap strawberries with other fresh fruits like blueberries, raspberries, or chopped mango.
- Ensure not to overheat the chocolate to prevent it from seizing or becoming grainy.
