Ingredients

For the Macerated Strawberries

  • 1 tablespoon baking powder

  • 3/4 cup milk
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon citrus zest (lemon, lime, or orange)
  • 1/2 teaspoon vanilla extract

For Egg Wash

  • 1 large egg
  • 1 tablespoon water
  • Granulated or turbinado sugar, for sprinkling

For the Whipped Labneh

  • 2 cups labneh
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • Fresh mint, finely minced, for garnish


Instructions

  1. Preheat Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper to prevent sticking and promote even baking.
  2. Macerate the Strawberries: In a mixing bowl, combine the sliced strawberries, citrus juice, sumac, and sugar. Stir gently to coat all the strawberries evenly. Leave the mixture at room temperature for at least 20 minutes to soften and develop flavor.
  3. Mix Dry Ingredients: In a large bowl, whisk together the white whole wheat flour, baking powder, sugar, and kosher salt to evenly distribute the leavening agents and seasonings.
  4. Mix Wet Ingredients: In a separate medium bowl, whisk the milk, extra virgin olive oil, citrus zest, and vanilla extract until well combined.
