Instructions

  1. Make the honey syrup or simple syrup: In a small saucepan set over medium heat, combine 1 cup of water and 3/4 cup of honey or sugar. Heat gently until it reaches a low simmer while stirring constantly to dissolve the honey or sugar completely into the water, creating a syrup. This should take about one minute. If using sugar, watch as the liquid transitions from gray to clear; if using honey, it will become a cohesive syrup.
  2. Blend the ingredients: Add the fresh lemon juice and hulled strawberries to a blender. Blend on high for about 30 seconds or until the mixture is smooth and there are no visible strawberry pieces remaining. Depending on your blender's power, you may need to blend a bit longer to achieve a completely smooth puree.
  3. Combine and serve: Pour the strawberry-lemon puree into a large pitcher. Add the prepared honey or sugar syrup, 2 tablespoons of rosewater, and 4 cups of cold water. Stir thoroughly to combine all the ingredients evenly. Chill if desired and serve over ice for a refreshing drink.
