Ingredients
Truffle Mixture
- 1 (8 ounce) package strawberry cream cheese (regular or whipped)

- 1 (12 ounce) package white chocolate chips
Coating
- 1 (12 ounce) package semi-sweet chocolate chips

- 6 ounces candy melts for drizzle decoration
Instructions
- Prepare Strawberry Cream Cheese Mixture: Place the strawberry cream cheese in a bowl and mix with a hand mixer on high for about a minute to ensure smoothness (skip if using whipped cream cheese). Add the strawberry extract and mix until thoroughly combined.
- Melt White Chocolate: Melt the white chocolate chips in the microwave at 50% power, starting with 1 minute, then stirring, followed by additional 15-30 second intervals until completely melted and smooth.
- Combine Mixture: Add the melted white chocolate to the cream cheese mixture and mix thoroughly until fully incorporated.
- Form Truffle Balls: Using a spoon or a small cookie scoop, scoop the mixture and drop balls onto wax paper. Since the mixture is sticky, a cookie scoop with a trigger helps release the balls easily. Refrigerate the balls until firm, at least 1 hour.
- Melt Semi-Sweet Chocolate: Melt the semi-sweet chocolate chips using the same microwave method as the white chocolate.
- Dip Truffles: Remove the chilled truffle balls from the refrigerator, dip them into the melted semi-sweet chocolate, and place them back onto wax paper.
- Chill Until Set: Refrigerate the dipped truffles until the chocolate coating hardens.
- Optional Drizzle Decoration: If desired, melt the candy melts according to package directions and drizzle over the chocolate-covered truffles for a festive presentation.

- Using a cookie scoop with a trigger makes handling the sticky mixture much easier.
