Ingredients

Lobster

  • 2 whole lobster tails

  • Salt to taste
  • Fresh Italian parsley, chopped (amount as preferred)

Pasta

  • 1/2 pound bucatini
  • 1 ball fresh burrata cheese, divided

Instructions

  1. Prepare Lobster Tails: Bring a large pot of salted water to a gentle boil (not too vigorous). Add the lobster tails and cook for about 1 minute, just until they mostly turn opaque. They will be slightly undercooked at this stage. Remove from water and run under cold water to stop cooking. Using kitchen scissors, carefully cut the shell on both sides and extract the lobster meat. Chop the meat into bite-sized pieces and set aside.
  2. Cook Pasta: In the same boiling water, cook the bucatini according to package instructions until al dente. Drain and set aside, reserving some pasta water if needed.
  3. Make the Sauce: Heat olive oil in a medium sauté pan or skillet over medium heat. Add crushed red pepper and toast it for about 1 minute to release flavor. Pour in the marinara sauce and add the finely chopped olives. Bring to a gentle simmer and cook for about 5 minutes. Taste and adjust seasoning with salt and a pinch of oregano if desired. Remove from heat and stir in chopped Italian parsley.
