Description

Ingredients

  • 2-2 ½ lbs skinless boneless chicken thighs
  • ½ cup honey
  • ½ cup soy sauce (use low sodium if desired)
  • 1 ½ Tbsp sriracha
  • 1 Tbsp apple cider vinegar
  • 5 cloves garlic (minced)
  • black pepper (to taste)

Thickening Mixture

  • 2 Tbsp corn starch
  • 2 Tbsp cold water

For Serving

Instructions

  1. Combine Ingredients: In your slow cooker, add the chicken thighs, honey, soy sauce, sriracha, apple cider vinegar, minced garlic, and black pepper. Stir well to combine and ensure the chicken is fully coated with the sauce.
  2. Slow Cook the Chicken: Cover the slow cooker with its lid and cook on high heat for approximately 3 to 3 ½ hours, or until the chicken is tender and can easily be pulled apart with a fork.
  3. Prepare Thickening Sauce: Remove the cooked chicken from the slow cooker and transfer it to a large bowl or cutting board. In a small bowl, whisk together the corn starch and cold water until the mixture is smooth and free of lumps. Pour this mixture into the slow cooker and stir to combine with the sauce.
  4. Shred and Return Chicken: Using a fork, gently break the chicken into bite-sized pieces, aiming for chunks rather than finely shredded pieces. Add the chicken back into the slow cooker, stir to coat with the thickened sauce, then cover and cook on high for an additional 30 minutes until the sauce has thickened substantially.
