Instructions
- Season the steak: In a large bowl, combine 3 pounds of sirloin steak pieces with 2 teaspoons kosher salt and 1 teaspoon black pepper and toss until evenly coated.
- Brown the steak: Heat a large skillet over medium-high heat and add 1 tablespoon vegetable oil. Once the oil is hot, brown the steak pieces in batches to develop color and flavor without fully cooking them. Add more oil as necessary during this step.

- Add liquids and seasonings: Pour in 1 cup unsalted beef stock and sprinkle evenly with the 1-ounce packet of au jus gravy mix. Lay the 4 tablespoons of thinly sliced unsalted butter over the top of the mixture.
- Slow cook the steak bites: Cover the slow cooker with its lid and cook on high for 3 to 4 hours or on low for 6 to 8 hours. Stir gently once every hour if possible to ensure even cooking and flavor distribution.
