Instructions
- Poach the eggs: Bring a pot of water to a boil, ensuring there is enough water to cover the eggs once placed in the pot. Drop the metal rims (outer rims only) of two mason jar lids into the boiling water, laying them flat on the bottom. Once the water is boiling, turn off the heat and carefully crack each egg directly into one of the metal rims. Cover the pot and let the eggs poach for about 5 minutes for semi-soft yolks. For softer yolks, poach for 4 to 4:30 minutes.
- Toast bread and prepare avocado: While the eggs are cooking, toast the slices of whole grain bread until golden and crisp. Smash the avocado evenly onto each piece of toasted bread to create a creamy base.
- Assemble and serve: Once the eggs are done poaching, use a spatula to carefully lift each egg out of the water. Gently remove the metal rim from the eggs while holding them over the water to avoid breaking. Place the poached eggs on top of the smashed avocado toast. Sprinkle with shaved Parmesan cheese, season with salt and pepper to taste, and garnish with fresh herbs. Serve toasted avocado toast alongside quartered heirloom tomatoes for a fresh and vibrant finish.
