Ingredients

Sausage and Vegetables

  • 12 ounces smoked sausage, sliced
  • 1 cup onion, diced
  • 1 cup green pepper, diced

  • 2 cups long grain rice
  • 3 cups chicken broth
  • 1 teaspoon paprika

Instructions

  1. Brown the Sausage: Heat a large skillet over medium heat and add the sliced smoked sausage. Cook until the sausage is browned and releases its flavorful oils, about 5-7 minutes.
  2. Sauté Vegetables: Add the diced onions, green and red peppers, and minced garlic to the skillet. Continue cooking for approximately 5 minutes, stirring occasionally, until the vegetables have softened and become fragrant.
  3. Cook Rice with Spices: Stir in the long grain rice along with the chicken broth, paprika, onion powder, cayenne pepper, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 15 minutes, or until the rice is cooked through and the liquid is absorbed.
  4. Cook the Shrimp: Once the rice is done, gently stir in the peeled and deveined shrimp. Cover again and cook for an additional 5 minutes or until the shrimp turn pink and are fully cooked.
