Instructions

  1. Shred the cabbage: Remove the core from the cabbage by cutting at an angle where the stems meet the leaves, then slice thinly or shred using a food processor with a slicing blade or mandoline. If the cabbage is wet, pat dry with a towel.
  2. Sauté the cabbage: Heat a large cast iron skillet over medium-high heat and add the olive oil. When the oil shimmers, add the cabbage, sliced onions, and minced garlic. Although the pan looks full, the cabbage will cook down quickly.
  3. Season the cabbage: Sprinkle in kosher salt, crushed red pepper flakes or Aleppo pepper, and ground coriander. Continue to cook, tossing occasionally, until the cabbage is fully softened and caramelized, about 10-12 minutes.
  4. Finish and serve: Remove the skillet from heat and squeeze fresh lime juice over the cabbage. For added flavor, drizzle with creamy Feta Dressing or Tahini Sauce if desired, then serve warm.
