Ingredients
Sweet Potatoes
- 2-1/2 lbs. mixture of white and orange (yams) sweet potatoes, peeled and cubed into bite-sized pieces
Sausage and Vegetables
- 1 lb. fresh Italian ground sausage (mild or spicy)
- 1/2 large yellow onion, finely diced
- 1 large green bell pepper, finely chopped
- 1 large red bell pepper, finely chopped
Spices and Garnish
- 1 tsp. ground cumin
- 1 tsp. smoked paprika
- 1/2 tsp. table salt
- 1 tsp. minced fresh parsley
- 1-2 tsp. cooking oil (optional, any kind)
Instructions
- Prepare Sweet Potatoes: Bring a large pot of salted water to a boil. Add the cubed sweet potatoes and boil for 4-5 minutes, or until they’re almost tender. Be careful not to overcook them to avoid mushiness. Drain and set aside.
- Brown Sausage: In a large nonstick skillet over medium-high heat, cook the ground Italian sausage, breaking it up, until browned and cooked through. Remove the sausage from the skillet and place on a towel-lined plate to drain excess fat.
- Sauté Onion: If the skillet lacks sufficient fat after removing sausage, add 1-2 teaspoons of oil. Add the finely diced yellow onion and sauté over medium heat for about 5 minutes until softened and translucent.
- Add Bell Peppers: Stir in the chopped green and red bell peppers and continue sautéing for another 5 minutes until they are tender and slightly softened.
- Combine and Season: Sprinkle in the ground cumin, smoked paprika, and salt. Gently fold in the cooked sausage and the parboiled sweet potatoes, stirring carefully to warm them through without breaking up the potatoes.
- Garnish and Serve: Transfer the hash to a serving dish and sprinkle with the minced fresh parsley before serving.
