Description
These Roasted Garlic Parmesan Potatoes are a savory side dish featuring crispy red potatoes tossed in olive oil, minced garlic, and generous amounts of parmesan cheese, then baked until golden brown and tender. Finished with melted butter and fresh parsley, they make a perfect accompaniment to any meal.
Ingredients
Potatoes
- 3 pounds rinsed and quartered red potatoes
Seasoning
- ¼ cup olive oil
- 8 finely minced cloves of garlic
- 1 cup grated parmesan cheese (divided: ¾ cup for mixing, ¼ cup for topping)
- Salt, to taste
- Black pepper, to taste
- 2 tablespoons unsalted butter, melted
- 3 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) to prepare for roasting the potatoes.
- Prepare the potatoes: Rinse the red potatoes thoroughly and cut them into quarters to ensure even cooking and a perfect crispy texture.
- Season the potatoes: In a large mixing bowl, combine the quartered potatoes with olive oil, finely minced garlic, ¾ cup of grated parmesan cheese, salt, and pepper. Toss everything together thoroughly with a spoon or rubber spatula until the potatoes are evenly coated.
- Arrange for roasting: Spread the potatoes out in a single layer on a baking sheet or roasting pan, positioning the cut side down for optimal browning. Sprinkle the remaining ¼ cup parmesan cheese evenly over the potatoes.
- Roast the potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25 to 30 minutes, or until they become golden brown and tender when pierced with a fork.
- Finish and serve: Once cooked, transfer the potatoes to a serving bowl. Toss them with the melted unsalted butter and freshly chopped parsley to add richness and freshness before serving.
Notes
- You can substitute red potatoes with Yukon Gold or baby potatoes for a different texture.
- For extra crispiness, spread the potatoes in a single layer without overcrowding the pan.
- Adjust garlic quantity according to your preference for a milder or stronger flavor.
- The parmesan cheese adds saltiness, so taste before adding extra salt.
- Leftover roasted potatoes can be reheated in the oven to retain their crispiness.
