Description

This Roasted Broccoli and Whipped Tofu with Chile Crisp Crunch is a flavorful plant-based dish combining tender, roasted broccoli with a creamy silken tofu and cashew butter whip, topped with a crunchy, spicy chile crisp and toasted cashew-panko mixture. Perfect as a satisfying appetizer or light main course, it blends textures and bold flavors for a delightful culinary experience.

Ingredients

Broccoli and Roasting

  • 1½ pounds broccoli florets
  • 4 tablespoons extra-virgin olive oil
  • 2 teaspoons soy sauce
  • Salt and black pepper to taste
  • 1 garlic clove, thinly sliced

Chile Crisp Crunch

  • ½ cup coarsely chopped cashews
  • 1 tablespoon chile crisp, plus more for serving
  • ⅓ cup panko bread crumbs

Whipped Tofu

  • 14 ounces silken tofu, drained
  • 1 cup cashew butter
  • Salt, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for roasting the broccoli.
  2. Prepare Broccoli: In a large bowl, toss the broccoli florets with extra-virgin olive oil, soy sauce, salt, black pepper, and thinly sliced garlic, ensuring everything is evenly coated for flavor infusion.
  3. Roast Broccoli: Spread the seasoned broccoli evenly on the prepared baking sheet and roast in the oven for 25 minutes, flipping the florets halfway through to promote even cooking and caramelization.
  4. Toast Cashews and Panko: Meanwhile, heat a skillet over medium heat and toast the coarsely chopped cashews along with panko bread crumbs and chile crisp for 3 to 4 minutes until golden and fragrant, creating the crunchy topping.
  5. Blend Whipped Tofu: In a blender, combine silken tofu and cashew butter, blending until smooth and creamy. Season with salt to enhance the flavor of the tofu whip.
  6. Assemble the Dish: Spread the whipped tofu on a serving plate to form a base, arrange the roasted broccoli on top, and then generously sprinkle the chile crisp crunch mixture over everything. Add extra chile crisp if desired for an extra kick.

Notes

  • Drain the silken tofu well to avoid excess moisture in the whipped tofu.
  • For a gluten-free version, substitute panko breadcrumbs with gluten-free breadcrumbs or crushed nuts.
  • Adjust the amount of chile crisp to control the spice level according to your preference.
  • To enhance nuttiness, you can lightly toast the cashew butter before blending if desired.
  • This dish is best served immediately to maintain the crunch and freshness.
