Ingredients
Crust
- 2 1/2 cups pretzels (crushed)
- 3/4 cup unsalted butter (melted)
- 3 tablespoons granulated sugar
Cream Cheese Filling
- 16 ounce package cream cheese (softened to room temperature)
- 3/4 cup granulated sugar
- 16 ounces whipped topping (thawed)
Blue Layer
- 6 ounce package blue mixed berry Jell-o
- 1 cup blueberries (fresh or thawed frozen)
- 2 cups boiling water (half of 4 cups total, divided as 2 cups per Jell-o layer)
Raspberry Layer
- 6 ounce package raspberry Jell-o
- 1 cup raspberries (fresh or thawed frozen)
- 2 cups boiling water (remaining half of 4 cups total)
Instructions
- Preheat and Prepare Crust: Preheat your oven to 400°F. In a medium bowl, mix crushed pretzels, melted butter, and 3 tablespoons granulated sugar until well combined. Press this mixture firmly into the bottom of a 9x13 baking dish. Bake for 10 minutes until set and fragrant.
- Cool Crust: Remove the crust from the oven and allow it to fully cool before adding the next layers to prevent melting the cream cheese mixture.
- Make Cream Cheese Filling: In a large bowl, beat the softened cream cheese with 3/4 cup granulated sugar using an electric mixer until smooth and creamy. Gently fold in the whipped topping until just combined to keep the mixture light and airy.
- Layer First Cream Cheese Portion: Spread half of the cream cheese mixture evenly over the cooled pretzel crust. Refrigerate the dish for 30 minutes to allow this layer to firm up.
- Set Aside Remaining Cream Cheese: Cover the remaining cream cheese mixture and keep it refrigerated until needed for the top layer.
- Prepare Blue Jell-o Layer: In a bowl, whisk together the blue mixed berry Jell-o powder with 2 cups boiling water until completely dissolved. Let it cool fully to room temperature but do not let it set.
- Assemble Blue Layer: Sprinkle the blueberries evenly over the chilled cream cheese layer. Pour the cooled but still liquid blue Jell-o gently over the blueberries, ensuring coverage without disturbing the layer below. Return the dish to the refrigerator and chill for 2 to 4 hours until the blue gelatin layer is fully set.
- Top With Remaining Cream Cheese Mixture: Once the blue layer is set, carefully spread the remaining cream cheese mixture evenly on top. Refrigerate again for 30 minutes to chill.
- Prepare Raspberry Jell-o Layer: Dissolve the raspberry Jell-o powder in 2 cups boiling water by stirring thoroughly. Cool it fully to room temperature without letting it gel.
- Assemble Raspberry Layer: Scatter the raspberries evenly over the cream cheese layer. Pour the cooled raspberry Jell-o gently over the raspberries to cover. Return the dish to the refrigerator and chill for another 2 to 4 hours or overnight to allow the top Jell-o layer to set completely.
- Serve: Once fully set, slice into squares and serve chilled. Optionally, garnish with a dollop of whipped cream for extra indulgence.
Notes
- Ensure cream cheese is softened to room temperature for smooth mixing.
- Let gelatin mixtures cool completely but not set before pouring over layers to avoid mixing layers.
- Chilling times vary with refrigerator temperature; ensure each gelatin layer is fully firm before adding next.
- Fresh or frozen berries can be used; thaw frozen berries before use for best texture.
- Use an electric mixer for the cream cheese filling for best smoothness and incorporation.
- This dessert is best served chilled and consumed within 2 days for optimal freshness.
