Description

This Quick and Easy Green Chile Chicken Enchilada Casserole is a comforting, cheesy Mexican-inspired dish perfect for feeding a family. Featuring tender baked chicken, vibrant green chile enchilada sauce, and layers of charred corn tortillas, Monterey Jack cheese, and reduced fat sour cream, it’s a flavorful casserole that even picky eaters will love. The recipe includes a simple charring technique for the tortillas that elevates the texture and taste, and can be skipped for a quicker version. Ideal for a satisfying weeknight dinner or gathering with loved ones.

Ingredients

Chicken

  • 4 skinless, boneless chicken breast halves
  • Garlic salt to taste

Tortillas and Sauce

  • 18 (6 inch) corn tortillas, torn in half
  • 1 (28 ounce) can green chile enchilada sauce

Dairy

  • 1 (16 ounce) package shredded Monterey Jack cheese
  • 1 (8 ounce) container reduced fat sour cream

Instructions

  1. Prepare and preheat oven: Gather all ingredients. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a medium baking dish to prevent sticking.
  2. Bake the chicken: Season the chicken breast halves with garlic salt to taste. Arrange them in the greased baking dish and bake in the preheated oven for about 45 minutes until the chicken is no longer pink inside and the juices run clear. Use an instant-read thermometer to ensure the internal temperature reaches at least 165 degrees F (74 degrees C).
  3. Shred the chicken: Remove the chicken from the oven and let it cool slightly. Using two forks, shred the chicken into bite-sized pieces and set aside for layering.
  4. Char the tortillas (optional): Carefully char each torn tortilla half over the open flame of a gas stove burner using metal tongs until they lightly puff, which takes about 1 minute. This step adds flavor and improves texture but can be skipped if preferred.
  5. Start layering the casserole: Pour about 1/2 inch of the green chile enchilada sauce into the bottom of a medium baking dish. Arrange 6 tortilla halves in a single layer on top of the sauce.
  6. First layer of fillings: Sprinkle half of the shredded chicken evenly over the tortillas. Top with one-third of the shredded Monterey Jack cheese, half of the sour cream, and one-third of the remaining enchilada sauce.
  7. Repeat layers: Repeat the layering process with another 6 tortillas, the remaining chicken, another third of the cheese, remaining sour cream, and another third of the enchilada sauce.
  8. Top layer and final assembly: Coat the remaining tortillas thoroughly with some of the remaining enchilada sauce and place them on top. Sprinkle the last third of shredded cheese evenly over the top and drizzle with any leftover enchilada sauce.
  9. Bake the casserole: Cover the baking dish with foil and bake in the preheated oven for 45 minutes until bubbly and heated through.
  10. Rest and serve: Allow the casserole to cool slightly before serving so it sets and is easier to portion.

Notes

  • If you want to skip the charring step, tear the tortillas into quarters so they absorb the sauce better.
  • Use reduced fat sour cream to keep the dish lighter without compromising creaminess.
  • To speed up preparation, cook chicken in advance or use pre-cooked rotisserie chicken.
  • This casserole can be made ahead and refrigerated; bake immediately before serving.
  • For more heat, add diced jalapeños or hot sauce to the enchilada sauce.
