- 3 cups Rice Krispies cereal
For the Rice Krispies Filling
- 2 1/2 Tablespoons unsalted butter
- 1 teaspoon pumpkin pie spice
- 3 cups (about 24) marshmallows
- 2 teaspoons orange food coloring
- 4 cups Rice Krispies cereal

Instructions
- Prepare the pan: Coat an 8-inch round cake pan with cooking spray to prevent sticking and set it aside for later use.
- Make the Rice Krispies crust: In a medium saucepan over medium-low heat, melt 1 1/2 tablespoons unsalted butter. Add 2 cups marshmallows and stir constantly until the marshmallows have melted completely. Remove from heat and stir in 1/2 teaspoon vanilla extract. Then fold in 3 cups of Rice Krispies cereal until evenly coated. Transfer this mixture into the prepared cake pan and firmly press it against the inside edges to form a 1-inch high crust. Let it cool while preparing the filling.
- Make the Rice Krispies filling: In the same medium saucepan over medium-low heat, melt 2 1/2 tablespoons unsalted butter with 1 teaspoon pumpkin pie spice. Once melted, add 3 cups marshmallows and stir constantly until melted and smooth. Remove from heat and stir in 2 teaspoons orange food coloring. Add 4 cups Rice Krispies cereal and mix until the cereal is fully coated.
- Assemble the pie: Press the filling mixture firmly inside the crust border in the cake pan, compacting it to create a dense filling. Allow the assembled pie to cool completely in the pan to set properly.
- Serve: Once cooled, place a serving plate on top of the pan and invert to release the pie. Slice into wedges and optionally top each serving with a dollop of whipped cream for added flavor and presentation.
