Description

These Pumpkin Peanut Butter Balls are a delicious and nutritious no-bake treat combining creamy peanut butter, pumpkin puree, and oats, enhanced with cinnamon and mini chocolate chips. Perfect for a healthy snack or dessert, they require minimal ingredients and prep time, and can be enjoyed chilled or immediately.

Ingredients

Dry Ingredients

  • 2 cups old fashioned oats (gluten free if needed)
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 1/4 cup mini chocolate chips

Wet Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup pumpkin puree
  • 1/4 cup honey (sub maple syrup to make them vegan)
  • 1 teaspoon vanilla extract

Instructions

  1. Pulse Oats: Add the oats to a food processor and pulse them until they are ground into smaller pieces, leaving some texture and chunks for a hearty consistency.
  2. Blend Ingredients: Add peanut butter, pumpkin puree, honey, vanilla extract, cinnamon, and salt to the food processor and pulse until the mixture forms a sticky, well-incorporated batter.
  3. Mix Batter: Transfer the batter to a mixing bowl. If the mixture isn't sticky enough, add water in 1/2 tablespoon increments until it reaches a sticky consistency. Fold in mini chocolate chips evenly.
  4. Form Balls: Using a cookie scoop or tablespoon, scoop portions of batter and roll them into balls. Place the balls on a plate or tray. You should get about 20 balls in total.
  5. Chill: Refrigerate the pumpkin peanut butter balls for about 30 minutes until firm and chilled. They can be eaten immediately if preferred, but chilling enhances their texture and flavor.
  6. Enjoy and Share: Serve and enjoy these healthy treats. Don’t forget to leave a rating or review to share your experience with others!

Notes

  • Use gluten free oats if you need a gluten free treat.
  • To make the recipe vegan, substitute honey with maple syrup.
  • If the mixture is too dry, add water a little at a time until sticky enough to form balls.
  • Mini chocolate chips add a nice texture and sweetness but can be omitted for a healthier version.
  • Store in an airtight container in the refrigerator for up to 1 week.
