Ingredients
Beef and Sauce
- 1 boneless beef chuck roast (3 pounds)
- 1 1/2 cups ketchup
- 1/4 cup packed brown sugar
- 1/4 cup barbecue sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 1 teaspoon liquid smoke (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
Sandwich Assembly
- 12 sandwich buns, split
- Optional: Sliced onions, dill pickles, and pickled jalapenos
Instructions
- Prepare the roast: Cut the beef chuck roast in half and place it in a 3- or 4-quart slow cooker. For an extra layer of flavor, you can brown the beef in a hot skillet before transferring it to the slow cooker.
- Make the sauce: In a small bowl, combine ketchup, brown sugar, barbecue sauce, Worcestershire sauce, Dijon mustard, liquid smoke (if using), salt, garlic powder, and pepper. Whisk together until smooth and well blended.
- Slow-cook the beef: Pour the sauce mixture over the beef in the slow cooker. Cover and cook on low heat for 8 to 10 hours, or until the meat is very tender and easy to shred.
- Shred the beef: Remove the meat from the slow cooker and let it cool slightly. Skim any excess fat from the cooking liquid. Using two forks, shred the beef into bite-sized pieces.
- Heat it through: Return the shredded beef to the slow cooker, mixing it with the remaining sauce. Cover and cook on low for an additional 15 minutes, or until heated through.
- Assemble the sandwiches: Using a slotted spoon, drain excess liquid from the beef mixture and place about 1/2 cup onto each sandwich bun. Top with sliced onions, dill pickles, and pickled jalapenos as desired. For extra crunch and to prevent sogginess, toast the buns lightly before assembling.
Notes
- For deeper flavor, brown the beef before slow cooking.
- Adjust the barbecue sauce and seasonings to taste for sweetness or heat.
- To keep buns from getting soggy, toast them lightly before adding the beef.
- Leftover shredded beef can be refrigerated for up to 3 days or frozen for up to 2 months.
- Optional toppings add texture and tanginess to balance the rich beef.
