Description
This vibrant Pineapple Rice recipe combines fragrant basmati or jasmine rice with crushed pineapple, lime juice, and a touch of spice for a sweet and tangy side dish. Simmered gently on the stovetop, it is infused with tropical flavors and fresh cilantro, making it a perfect accompaniment to grilled meats or a flavorful vegetarian meal.
Ingredients
Rice and Liquid
- 1 1/2 cups water
- 1 (8 oz.) can crushed pineapple in pineapple juice (1 cup)
- 1 cup basmati or jasmine rice, not quick-cooking
Flavorings
- 2 tsp. sugar
- 1 Tbsp. unsalted butter
- 1/2 tsp. kosher salt
- 1/4 – 1/2 tsp. red pepper flakes
- Juice of 1/2 lime (about 1 Tbsp.)
- Fresh cilantro, chopped (to taste)
Instructions
- Combine Ingredients: In a small saucepan, combine the water, crushed pineapple with its juice, sugar, unsalted butter, kosher salt, and red pepper flakes. Cover the saucepan and bring the mixture to a simmer over medium heat.
- Add Rice and Simmer: Stir in the basmati or jasmine rice and bring the mixture back to a simmer. Reduce the heat to low, leave the saucepan partially covered, and allow the rice to cook gently for 12-15 minutes until the water is absorbed and the rice is nearly tender but still has a slight bite.
- Steam the Rice: Remove the saucepan from the heat and keep it covered, letting the rice steam for an additional 5 minutes. This ensures the grains become fluffy and fully cooked.
- Finish and Serve: Fluff the rice with a fork to separate the grains. Stir in the lime juice and chopped fresh cilantro generously, adjusting according to your preference. Taste the rice and add more salt if needed before serving.
Notes
- You can substitute jasmine rice if you prefer its floral aroma, but avoid quick-cooking rice for best texture.
- The red pepper flakes add a subtle heat; adjust the amount to your spice tolerance.
- Fresh cilantro enhances the brightness of the dish; add more for a stronger herbal flavor.
- This rice pairs well with grilled chicken, fish, or as a side for vegetarian meals.
