Description

Pineapple Dream Dessert is a refreshing, no-bake layered treat combining a buttery graham cracker crust with creamy cream cheese, sweet crushed pineapple, and fluffy fat-free Cool Whip. Perfectly chilled and topped with extra graham crumbs, this dessert offers a delightful balance of tangy fruit and smooth sweetness in every bite.


Ingredients

Crust

  • 2 1/2 cups graham cracker crumbs (about 2 sleeves)
  • 1/2 cup unsalted butter, melted

Filling

  • 4 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar, sifted
  • 20 oz crushed pineapple, well drained
  • 8 oz fat-free Cool Whip
  • Extra graham cracker crumbs (1/2 cup) for topping


Instructions

  1. Preheat the Oven: Set your oven to 300°F (150°C). This step is for the crust baking, although the dessert also offers a no-bake option if preferred.
  2. Prepare the Crust: Melt the butter in the microwave and let it cool slightly. Mix the melted butter with the graham cracker crumbs until evenly combined. Press 2 cups of the mixture firmly into the bottom of a 9x9 inch square pan. Bake for 8 to 10 minutes until set, then remove and allow to cool on a wire rack.
  3. Make the Cream Cheese Mixture: Beat together the softened cream cheese and butter until smooth and creamy. Lower the mixer speed, gradually add the powdered sugar one cup at a time, mixing until incorporated. Increase the speed and beat well for about a minute. Gently fold in 1 heaping tablespoon of the drained crushed pineapple using a rubber spatula. Spread this mixture evenly over the cooled crust.
  4. Prepare the Pineapple Whipped Topping: Fold the remaining drained crushed pineapple into the fat-free Cool Whip. Spread this pineapple Cool Whip layer over the cream cheese layer evenly.
  5. Finish and Chill: Sprinkle the remaining half cup of graham cracker crumbs over the top layer for texture and flavor. Refrigerate the assembled dessert for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set properly before serving.

Notes

  • Make sure to drain the crushed pineapple very well to prevent the dessert from becoming soggy.
