Ingredients

Beef and Seasoning

  • 4 pounds boneless chuck roast (excess fat trimmed)
  • Kosher salt and freshly ground black pepper (to taste)
  • 2 tablespoons canola oil

Vegetables and Herbs

  • 1 medium sweet onion (cut into 1-inch wedges)
  • 3 large carrots (cut into 3-inch pieces)
  • 8 ounces cremini mushrooms
  • 4 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1 1/2 pounds small Yukon gold potatoes
  • 2 tablespoons chopped fresh parsley leaves

Liquids and Flavorings

  • 2 tablespoons tomato paste
  • 4 cloves garlic (minced)
  • 1 cup dry red wine
  • 1 cup beef stock


Instructions

  1. Preheat the Oven: Set your oven to 325 degrees Fahrenheit to prepare for slow roasting the pot roast.
  2. Season the Beef: Generously season the chuck roast with 2 teaspoons kosher salt and 3/4 teaspoon freshly ground black pepper to enhance the meat’s natural flavors.
  3. Sear the Roast: Heat canola oil in a Dutch oven over medium-high heat. Brown the beef on all sides, approximately 5-6 minutes per side, to develop a rich crust and deep flavor. Once browned, set it aside.
  4. Sauté the Onions: Reduce the heat to medium and add onion wedges to the Dutch oven. Cook while stirring frequently until the onions become tender, about 5 minutes.
  5. Add Tomato Paste and Garlic: Stir in the tomato paste and minced garlic, cooking until fragrant, about 1 minute, to build the base of the sauce.
  6. Deglaze the Pot: Pour in the red wine and beef stock, scraping up any browned bits stuck to the bottom of the Dutch oven to incorporate all of the developed flavors into the sauce.
  7. Add Vegetables and Herbs: Stir in carrots, mushrooms, thyme sprigs, and rosemary sprigs. Season with additional salt and pepper to taste. Bring the mixture to a boil, then reduce the heat and simmer gently.
  8. Braise the Roast: Nestle the browned beef back into the pot, covering the vegetables and partially submerged in the braising liquid. Cover the Dutch oven and place it into the preheated oven. Bake for 2 hours, allowing the flavors to meld and the beef to begin tenderizing.
  9. Add Potatoes and Continue Baking: Remove the Dutch oven from the oven, uncover, and place the Yukon gold potatoes around the roast. Cover again and return to the oven to bake until the beef is fork-tender, approximately 1 to 1 hour 30 minutes more.
