Description

Pepperoni Pizza Lasagna Roll Ups are a fun and tasty twist on traditional lasagna, combining classic pizza flavors in a convenient roll-up form. Tender lasagna noodles are filled with a creamy ricotta mixture, layered with pepperoni slices, and baked with marinara and a generous topping of melted mozzarella cheese. Perfect as a crowd-pleasing dinner for families or gatherings.

Ingredients

Lasagna Roll Ups

  • 16 lasagna noodles, cooked until tender
  • 1 24-ounce jar marinara or spaghetti sauce (any flavor)
  • 1 15-ounce container ricotta cheese
  • 2 to 2 1/2 cups freshly shredded mozzarella cheese
  • 1 6-ounce package pepperoni slices
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Optional: fresh parsley for garnish

Instructions

  1. Cook Noodles: Boil the lasagna noodles in a large pot until tender but not overcooked to prevent them from falling apart during assembly. Drain and set aside.
  2. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C). Lightly spray a 13×9-inch glass baking dish with cooking spray to prevent sticking.
  3. Spread Sauce: Pour and evenly spread a layer of marinara sauce on the bottom of the prepared baking dish.
  4. Prepare Noodles for Filling: Lay the cooked lasagna noodles flat on a large cutting board or baking sheet for easy assembly.
  5. Mix Ricotta Filling: In a medium bowl, combine ricotta cheese with onion powder, garlic powder, and Italian seasoning. Stir until mixture is smooth and well blended.
  6. Fill Noodles: Using a small cookie scoop or spoon, place one scoop of the ricotta mixture onto each lasagna noodle. Use an offset spatula or spoon to spread the filling evenly along the length of each noodle.
  7. Add Pepperoni and Roll: Place 8 to 10 pepperoni slices along the length of the ricotta-topped noodle. Carefully roll up the noodles tightly and place them seam-side down in the prepared baking dish.
  8. Top with Sauce and Cheese: Pour the remaining marinara sauce over the rolled noodles, then sprinkle with shredded mozzarella cheese evenly to cover.
  9. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese is fully melted, bubbly, and lightly golden brown.
  10. Garnish and Serve: Sprinkle fresh parsley or additional Italian seasoning on top if desired. Serve warm, pairing perfectly with garlic cheddar biscuits and a fresh salad for a complete meal.

Notes

  • Do not overcook the noodles, as they can become fragile and tear when rolling.
  • Use freshly shredded mozzarella for best melting and flavor.
  • Feel free to customize the pepperoni amount based on preference.
  • Allow the baked roll ups to cool for a few minutes before serving to help them set.
  • Leftovers can be refrigerated and reheated; they warm well in the oven or microwave.
