Description

This Pepperoni & Veggie Chicken Crust Pizza is a low-carb, protein-packed alternative to traditional pizza. Made with a homemade chicken-based crust seasoned with Italian herbs and parmesan, this recipe is topped with pizza sauce, mozzarella, pepperoni, bell peppers, and red onions. Baked to golden perfection and finished with optional fresh basil, hot honey, and chili flakes, it offers a delicious and healthier way to indulge in your favorite pizza flavors.

Ingredients

For the Chicken Crust

  • 1 Pound Ground Chicken
  • 2 Eggs
  • ¾ Cup Parmesan Cheese (divided)
  • 1 Tablespoon Italian Seasoning
  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Kosher Salt
  • ½ Teaspoon Ground Black Pepper

For the Toppings

  • ⅓-½ Cup Pizza Sauce (I love @raoshomemade)
  • 1 Cup Mozzarella Cheese (shredded)
  • 15 Slices Pepperoni
  • 1 Bell Pepper (sliced)
  • ½ Red Onion (thinly sliced)

Optional Garnishes

  • 2 Tablespoons Hot Honey
  • Red Chili Flakes
  • Fresh Basil

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) to prepare for baking the chicken crust and pizza.
  2. Prepare the Chicken Crust Mixture: In a food processor, combine ground chicken, eggs, ½ cup parmesan cheese, Italian seasoning, garlic powder, kosher salt, and black pepper. Pulse until the mixture is smooth and uniform.
  3. Shape the Crust: Line a rimmed baking sheet with parchment paper. Transfer the chicken mixture onto it and gently press into a thin, even rectangle using your hands. The mixture will be sticky, so patience is key.
  4. Bake the Crust: Place the shaped crust in the oven and bake for 20 minutes, or until the crust is set and edges are lightly golden.
  5. Add Sauce and Toppings: Remove crust from oven. Spread a thin layer of pizza sauce evenly over the crust. Sprinkle with shredded mozzarella, the remaining ¼ cup parmesan cheese, then top with pepperoni slices, sliced bell pepper, and thinly sliced red onion.
  6. Bake the Pizza: Return the pizza to the oven and bake for another 15 minutes, or until the cheese is fully melted. For crispier edges, place under the broiler for 2 minutes while watching closely to avoid burning.
  7. Cool and Garnish: Remove pizza from oven and allow it to cool slightly. Add optional garnishes such as fresh basil, red chili flakes, and a drizzle of hot honey to elevate the flavors.
  8. Serve: Cut the pizza into squares and serve immediately while warm. Enjoy your delicious and healthy chicken crust pizza!

Notes

  • Be patient when shaping the chicken crust as it is sticky; gently pressing is the best method.
  • Cooking times may vary slightly depending on oven performance — check crust for firmness and golden edges.
  • Hot honey and fresh basil add a fantastic sweet and aromatic touch but are optional.
  • This recipe can be adapted with different veggies or toppings according to preference.
  • To ensure even cooking, spreading the crust in a uniform thickness is important.
