Peanut Butter Pretzel Bites are a delightful no-bake treat featuring creamy peanut butter sandwiched between crunchy mini twist pretzels and partially dipped in rich dark chocolate. This easy-to-make snack combines sweet, salty, and chocolatey flavors, perfect for parties, snacks, or satisfying sweet cravings.
Ingredients
Peanut Butter Mixture
- ½ cup creamy peanut butter
- 3 tbsp salted butter, softened
- 2 tbsp granulated white sugar
- ½ tsp salt
- ¾ cup powdered sugar
Assembly & Coating
- 72 mini twist pretzels
- ¾ cup dark chocolate chips
- Sea salt (optional garnish)
Instructions
- Mix Peanut Butter Base: Use a stand or hand mixer to beat the creamy peanut butter, softened salted butter, granulated white sugar, and salt together in a medium-sized mixing bowl until fully combined and smooth.
- Add Powdered Sugar: Gradually beat in the powdered sugar on a low mixer setting until the mixture forms a soft dough consistency that is easy to shape.
- Prepare Freezing Surface: Line a large sheet pan with parchment paper to prevent sticking and set it aside for freezing the bites later.
- Form Peanut Butter Balls: Scoop out ½ tablespoon of the peanut butter mixture each time and roll it into smooth balls using your hands.
- Assemble Pretzel Sandwiches: Use two mini twist pretzels to sandwich each peanut butter ball, pressing gently until the sandwich is about ½ inch thick. Repeat until all peanut butter dough is used, making about 36 sandwiches.
- Freeze Sandwiches: Place all pretzel sandwiches onto the prepared sheet pan and freeze for 30 minutes to firm up. Alternatively, refrigerate if preferred.
- Melt Chocolate: Transfer dark chocolate chips to a microwave-safe bowl and melt in 15-second intervals, stirring between each, until smooth and fully melted, about 2-3 minutes.
- Dip Sandwiches: Remove sandwiches from freezer and dip each halfway into the melted dark chocolate. Place them back on the parchment-lined sheet pan. Sprinkle with sea salt for extra flavor if desired.
- Set Chocolate: Return the dipped peanut butter pretzel bites to the freezer for another 15 minutes to allow the chocolate to harden and set completely.
- Serve & Store: Serve the bites immediately chilled or store them in the refrigerator until ready to enjoy. They are best served cold for optimal texture and taste.
Notes
- Use creamy peanut butter for a smooth texture; crunchy peanut butter will make the dough harder to roll.
- If you don’t have mini twist pretzels, any small pretzel shape that can sandwich the peanut butter ball works.
- Freezing instead of refrigerating helps maintain the shape and firmness better.
- Be cautious when melting chocolate; stirring frequently prevents overheating and chocolate from seizing.
- The sea salt garnish is optional but adds a nice salty contrast to the sweetness.
- Store leftovers in an airtight container in the refrigerator for up to one week.
