Béchamel Sauce
- 1 tbsp Unsalted Butter
- 1 tbsp All-Purpose Flour
- 1 Cup Milk (2% or whole milk), warmed
- 1/8 tsp Nutmeg

Instructions
- Preheat Oven and Prepare Potatoes: Preheat the oven to 375°F (190°C). Bring 2 cups of water to a rolling boil in a pot, adding salt to season. Thinly slice the red potatoes and boil them for 3-4 minutes until par-cooked. Drain and pat dry with paper towels, then set aside.
