Description

This One Pot Smoked Sausage and Rice recipe is a flavorful, easy-to-make meal perfect for busy weeknights. Smoked turkey sausage is browned with colorful bell peppers, shallots, and garlic, then combined with jasmine rice and chicken stock to create a comforting, hearty dish. Finished with fresh green onions, it’s a crowd-pleaser that requires minimal cleanup.

Ingredients

Ingredients

  • 1 tablespoon olive oil
  • 12 ounces smoked turkey sausage, sliced into rounds
  • Kosher salt and pepper, to taste
  • 2 bell peppers, chopped
  • 1 shallot, diced
  • 4 garlic cloves, minced
  • 1 ½ cups jasmine rice
  • 3 to 4 cups chicken stock
  • 4 green onions, thinly sliced

Instructions

  1. Brown the Sausage: Heat olive oil in a large pot or skillet over medium heat. Add sausage rounds in a single layer, season with salt and pepper, and brown on one side. Flip and brown the other side. Once browned, transfer to a plate.
  2. Sauté Vegetables: In the same skillet, add chopped bell peppers, shallot, and garlic. Season again with salt and pepper. Cook, stirring frequently, for 5 to 6 minutes until the vegetables soften.
  3. Toast the Rice: Add jasmine rice to the skillet and stir. Cook for 2 to 3 minutes to allow the rice to toast slightly, enhancing its flavor.
  4. Simmer with Stock: Return the browned sausage to the pot. Pour in 3 cups of chicken stock and bring the mixture to a boil. Reduce heat to a simmer, cover the pot, and cook for 10 minutes. Check if the rice has absorbed the liquid; if too dry, add additional chicken stock ½ cup at a time. Continue cooking until the rice is tender, usually within 10 to 20 minutes depending on the rice type.
  5. Finish and Serve: Once the rice is fully cooked, sprinkle thinly sliced green onions over the dish. Serve hot and enjoy your hearty one-pot meal.

Notes

  • You can adjust the amount of chicken stock based on the rice variety and desired consistency.
  • Use smoked turkey sausage for a leaner option or substitute with smoked pork sausage if preferred.
  • For extra heat, add red pepper flakes while cooking the vegetables.
  • This dish can be garnished with fresh parsley or a squeeze of lemon juice to brighten flavors.
  • Leftovers store well in the fridge for up to 3 days and reheat nicely on the stovetop or microwave.
