Ingredients
Meat and Vegetables
- 1 pound ground beef (or ground chicken)
- 1 yellow onion, chopped
- 1 poblano pepper, seeded and chopped

- 1 can (28 ounces) crushed fire-roasted tomatoes
- 1/4 cup tomato paste
- 1 can (4 ounces) diced green chilies
- 2-3 cups chicken or beef broth
- 2 cups water
Pasta and Cheese
- 1 pound short cut pasta
- 1/4 cup hot sauce
- 2 ounces cream cheese, at room temperature
- 2 cups shredded melty cheese (such as colby, cheddar, pepper jack)
Garnish
- Green onions, chopped
- Cilantro, chopped
Instructions
- Brown the Meat and Sauté Vegetables: Preheat the oven to 425° F. In a large pot over medium-high heat, add the ground beef and chopped onion. Season with salt and black pepper. Brown the meat thoroughly while breaking it up with a spoon until cooked through and the onions soften.
- Add Spices and Peppers: Stir in the chopped poblano pepper, chili powder, garlic powder, smoked paprika, ground cumin, and cayenne pepper. Cook the mixture for about 5 minutes until the spices are fragrant and well combined with the meat and vegetables.
- Add Tomato Ingredients and Broth: Mix in the crushed fire-roasted tomatoes, tomato paste, and diced green chilies. Pour in 2 cups of broth and 2 cups of water, then season with additional salt if needed. Stir everything together to combine.
