Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal of the bars later.
- Mix Dry Ingredients: In a medium bowl, combine the rolled oats, granulated sugar, baking powder, salt, and cinnamon. Stir these together until evenly mixed.
- Mix Wet Ingredients: In a separate large bowl, whisk together the eggs, almond milk, unsweetened applesauce, and vanilla extract until fully blended.
- Combine and Rest: Pour the dry ingredients into the wet ingredients bowl and stir until just combined. Let the mixture rest for about 20 minutes to allow the oats and flavors to meld.
- Add Nuts and Cranberries: Fold in the finely chopped walnuts and dried cranberries, making sure they are evenly distributed throughout the mixture.
- Bake: Spread the mixture evenly into the prepared baking pan. Bake in the preheated oven for 25 to 30 minutes, or until the edges turn golden brown and a toothpick inserted in the center comes out clean.
- Cool and Slice: Allow the baked bars to cool on a wire rack for about 5 minutes. Using the parchment paper overhang, lift the bars out of the pan and transfer to the rack if needed. Once cooled, cut into 16 equal bars and serve.
