Description

These No-Bake Coconut Lime Energy Bites are a refreshing and healthy snack, combining the natural sweetness of medjool dates with crunchy cashews, almond flour, and zesty lime. Coated in shredded coconut and lime zest, they are perfect for a quick energy boost without any baking required.


Ingredients

Energy Bites

  • 1 cup packed pitted medjool dates (measured after pitting)
  • 1 cup raw cashews
  • 3/4 cup almond flour
  • 1/4 cup shredded coconut (unsweetened)
  • 1 Tbsp lime zest
  • 2-3 Tbsp lime juice
  • 3/4 tsp vanilla extract
  • 1 pinch sea salt

Coconut Lime Coating

  • 1/4 to 1/3 cup shredded coconut (unsweetened)
  • 1 Tbsp lime zest


Instructions

  1. Prepare Coconut Coating: In a small bowl or plate, combine the shredded coconut and lime zest. Stir well to blend the flavors evenly. Set aside for rolling later.
  2. Process Dates: Add the pitted medjool dates to your food processor and pulse until the dates break down into small bits or form a sticky ball. Remove this date mixture and set it aside.
  3. Blend Nuts and Flour: Place raw cashews, almond flour, and 1/4 cup shredded coconut into the empty food processor. Blend until it reaches a fine meal consistency, about 20 to 30 seconds.
  4. Combine Ingredients: Divide the date ball into four or more pieces and add them back into the food processor along with 1 tablespoon lime zest, 2 tablespoons of lime juice, vanilla extract, and sea salt. Blend until a tacky, dough-like consistency forms. Adjust the mixture by adding more lime juice if too dry, or more shredded coconut if too sticky.
  5. Form Energy Bites: Scoop approximately 1 tablespoon of dough and roll it into a ball with your hands. Then roll each ball in the prepared coconut lime coating to fully cover. Place the coated energy bites on a baking sheet or plate.
  6. Store and Serve: Enjoy the energy bites immediately or refrigerate in an airtight container for up to 1 week. For longer storage, freeze them for up to 1 month.
