Ingredients
Oat Base
- 2 cups quick oats (gluten-free if needed)
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 tsp vanilla extract
Chocolate Layer
- 1/3 cup creamy peanut butter
- 1/2 cup semi-sweet chocolate chips
Topping
- Remaining oat mixture from base
- Extra melted peanut butter for drizzling
- 2-3 tbsp mini chocolate chips for sprinkling
Instructions
- Prepare the Pan: Line an 8x8 inch baking pan with parchment paper to prevent sticking and make removal easier.
- Mix Oat Base: In a medium mixing bowl, combine the quick oats, 1/2 cup peanut butter, honey, and vanilla extract. Stir thoroughly until everything is well combined.
- Press First Layer: Transfer about 1 1/2 cups of the oat mixture into the lined baking pan. Press it down firmly and evenly with your hands or a spatula to create a compact base layer.
- Make Chocolate Layer: In a microwave-safe bowl, mix 1/3 cup peanut butter and 1/2 cup semi-sweet chocolate chips. Microwave in 20 to 30 second intervals, stirring between each, until the chocolate is melted and the mixture is smooth and combined.
- Assemble Layers: Pour the melted chocolate layer evenly over the pressed oat layer in the pan.
- Add Crumble Topping: Crumble the remaining oat mixture over the chocolate layer, allowing the chocolate to peek through. Drizzle extra melted peanut butter over the top and sprinkle with mini chocolate chips to garnish.
- Chill to Set: Refrigerate the pan for at least 2 to 3 hours to allow the bars to firm up. Once set, cut into 12 even bars. Store leftover bars in the refrigerator or freezer to maintain freshness.
