Instructions
- Caramelize the Onions: Melt the butter in a large pot over medium heat. Add the thinly sliced onions and sprinkle with salt. Cover the pot and let the onions cook for 10-15 minutes until they soften. Remove the lid and continue cooking for about 40 minutes, stirring occasionally, until the onions are deeply caramelized. If the onions start to brown too quickly or stick, add a splash of water and reduce the heat.
- Add Aromatics and Deglaze: Stir in the minced garlic and dried thyme, cooking for 2 minutes until fragrant. Pour in the white wine, increase the heat to medium-high, and cook until most of the wine liquid has evaporated, intensifying the flavor.
- Simmer the Soup: Add the beef broth and miso paste to the pot and bring to a simmer. Let the soup simmer gently for 10 minutes, stirring occasionally to fully dissolve the miso and marry the flavors.
- Prepare for Broiling: Preheat the oven broiler. Ladle the hot soup evenly into four ovenproof bowls placed on a baking sheet. Top each bowl with a slice of sourdough bread, then sprinkle the grated Gruyere cheese generously over the bread.
- Broil the Soup: Place the baking sheet under the broiler and broil for 2-3 minutes until the cheese melts, bubbles, and turns golden brown. Keep a close eye to prevent burning. Serve hot and enjoy the rich, savory flavors.
