Instructions

  1. Preheat and prep your pan: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease your loaf pan to prevent sticking and ensure easy cleanup.
  2. Mix the meatloaf: In a large bowl, gently combine all the meatloaf base ingredients: ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix just until all ingredients hold together; avoid overmixing to keep the meatloaf tender.
  3. Shape and bake: Shape the mixture into a loaf by hand or press it firmly into your prepared loaf pan. Place it in the oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C) for safe consumption.
  4. Make the glaze: While the meatloaf bakes, melt the unsalted butter in a small skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1–2 minutes. Stir in the grated Parmesan cheese, chopped parsley, and a pinch of salt. Let the glaze thicken slightly and absorb flavors.
