  • ¼ cup whole milk
  • ⅓ cup feta cheese, crumbled (plus more for serving)
  • ⅓ cup finely chopped fresh parsley (plus more for garnish)
  • 1 teaspoon fresh thyme
  • Kosher salt and black pepper, to taste


Instructions

  1. Preheat Oven and Heat Pan: Preheat your oven to 450°F (232°C) and position a rack in the middle. Place a rimmed sheet pan in the oven to heat while you prepare the vegetables.
  2. Toss Vegetables: In a mixing bowl, combine the chopped bell pepper, zucchini, green onions, and broccoli. Season generously with kosher salt and black pepper. Drizzle about 2 to 3 tablespoons of extra virgin olive oil over the vegetables and toss thoroughly to coat them evenly.
  3. Roast Vegetables: Using oven mitts, carefully remove the hot rimmed sheet pan from the oven. Spread the coated vegetables evenly on the hot pan and return it to the oven. Roast the vegetables for about 15 minutes or until they are tender and slightly charred at the edges.
  4. Lower Oven Temperature: Reduce the oven heat to 400°F (204°C) in preparation for baking the frittata.
  5.
