Description
These Marry Me Meatballs are tender chicken meatballs cooked in a creamy, flavorful sun-dried tomato sauce infused with garlic, basil, and Parmesan. Ready in just 30 minutes, they make a delicious and comforting meal perfect for any night of the week.
Ingredients
For the Meatballs
- 500 g Chicken mince
- 2 tsp Dried oregano (divided)
- 2 tsp Paprika (divided)
- 50 g Parmesan, grated (divided)
- Sea salt and freshly ground black pepper, to taste
For the Sauce
- 1 tbsp Olive oil
- 3 Garlic cloves, peeled and crushed
- 150 g Sun dried tomatoes, roughly chopped
- 150 ml Double cream (heavy cream)
- 200 ml Chicken stock
- 15 g Basil leaves
- 1/2 Lemon, juice only
Instructions
- Prepare the meatballs: Place the chicken mince, half of the dried oregano, half of the paprika, half of the grated Parmesan, and a good pinch of salt and pepper into a mixing bowl. Using clean hands, mix all ingredients thoroughly until well combined. Then, roll the mixture into approximately 16 evenly sized meatballs.
- Fry the meatballs: Heat the olive oil in a large deep frying pan over medium heat. Add the meatballs and cook them for about 10 minutes, turning occasionally until they are golden brown all over. Remove the meatballs from the pan and place them on a plate.
- Cook the aromatics: In the same pan, add the crushed garlic, roughly chopped sun-dried tomatoes, and the remaining dried oregano and paprika. Sauté for a few minutes until the garlic softens and the mixture becomes fragrant.
- Make the sauce and finish cooking: Pour in the double cream, chicken stock, and the remaining Parmesan. Season with salt and pepper, then stir everything together. Return the meatballs to the pan, making sure they are submerged in the sauce. Simmer for an additional 5 minutes to cook the meatballs through and thicken the sauce slightly.
- Finish and serve: Check that the meatballs are fully cooked. Remove the pan from the heat, then sprinkle fresh basil leaves over the dish and squeeze the juice of half a lemon on top. Adjust seasoning with salt and pepper if needed before serving.
Notes
- You can substitute chicken mince with turkey mince or lean beef if preferred.
- Using good quality sun-dried tomatoes packed in oil will enhance the flavor of the sauce.
- Serve these meatballs with pasta, mashed potatoes, or crusty bread to soak up the delicious sauce.
- If desired, garnish with extra Parmesan and fresh basil for presentation.
