Description

This Life-Changing Tahini Scoopable Cookie is a warm, gooey, and irresistible dessert made in one bowl and baked in a single dish. It’s better-for-you, being dairy-free, refined sugar-free, and nut-free, yet delivers rich chocolate chip cookie flavors with the creamy goodness of tahini.

Ingredients

Dry Ingredients

  • 1 Cup Almond Flour
  • 1 Teaspoon Baking Soda
  • ¼ Cup Collagen Peptides (optional)
  • 1 Cup Chocolate Chips (recommendations: @hukitchen or @enjoylifefoods)

Wet Ingredients

  • 1 Cup Tahini (use more liquidy tahini such as @soomfoods for best results)
  • ½ Cup Maple Syrup
  • 1 Egg
  • 2 Teaspoons Vanilla Extract

Finishing

  • 1 pinch Flaky Salt
  • Vanilla Gelato or Ice Cream (suggested: Talenti)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F. Grease an 8x8 inch round baking dish thoroughly and set aside to prevent sticking.
  2. Mix Wet and Dry Ingredients: In a large bowl, combine almond flour, tahini, maple syrup, egg, baking soda, vanilla extract, and collagen peptides if using. Stir thoroughly until the batter is completely smooth and lump-free.
  3. Fold in Chocolate Chips: Gently fold in the chocolate chips into the batter until they are evenly dispersed throughout the mixture.
  4. Scoop Dough into Dish: Using a cookie scoop, drop scoops of the batter evenly into the prepared baking dish, filling it completely.
  5. Bake: Place the baking dish in the preheated oven and bake for 16–17 minutes until the top is golden and crunchy but the inside remains gooey.
  6. Cool and Serve: Remove the dish from the oven and allow it to cool for one minute. Scoop portions directly from the dish into bowls, add a generous scoop of vanilla ice cream or gelato on top, and finish with a pinch of flaky salt. Serve immediately and enjoy the warm, gooey dessert.

Notes

  • Using a more liquidy tahini improves the texture and moisture of the cookie.
  • Collagen peptides are optional but add extra protein and nutritional benefits.
  • The cookie is designed to be gooey inside with a crunchy top for the best texture.
  • Pairing with vanilla gelato or ice cream intensifies the dessert experience with a creamy cool contrast.
  • Grease the baking dish well to ensure easy scooping and serving.
