Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and position a rack in the lower third of the oven to prepare for slow roasting.
  2. Season and Brown the Beef: Pat the chuck roast dry and season all over with kosher salt. Heat vegetable oil in a large Dutch oven over medium-high heat. Once shimmering, brown the beef pieces in batches, about 10 minutes total, ensuring each side develops a deep, golden crust. Remove beef to a plate after browning.
  3. Sauté Aromatics: Lower heat to medium and add sliced onions to the Dutch oven. Cook, stirring occasionally, until slightly softened, about 4 minutes. Add chopped garlic and grated ginger, cooking until fragrant, about 1 more minute. If the aromatics start to brown too quickly, deglaze the pot with ¼ cup of beef stock, scraping up browned bits for extra flavor.
  4. Add Sauce Ingredients and Simmer: Stir in gochujang paste, brown sugar, and soy sauce until well combined. Return the browned beef along with any juices to the pot. Add the remaining beef stock and bring everything to a simmer. Let the liquid reduce slightly for about 5 minutes.
  5. Slow Roast the Beef: Cover the Dutch oven with a lid and transfer it to the preheated oven. Cook for 2 hours, or until the meat is very tender and easily shreds with a fork.
