Ingredients

Beef and Marinade

  • 1 tbsp fresh ginger, grated

Cooking

  • 1 carrot, julienned
  • 1 cup mushrooms (shiitake or white button), sliced
  • 2 tbsp honey butter (1 tbsp melted butter + 1 tbsp honey, mixed)

Instructions

  1. Prepare the marinade: In a mixing bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear or red apple, mirin if using, gochujang for spice if desired, black pepper, chopped green onions, and toasted sesame seeds. Mix well to create the bulgogi marinade.
  2. Marinate the beef: Add the thinly sliced ribeye or sirloin steak to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, preferably up to 1 hour, to allow the flavors to penetrate the beef.
  3. Heat the pan: Place a grill pan or cast iron skillet over medium-high heat and add 1 tablespoon of neutral oil. Allow the oil to heat thoroughly to ensure searing of the beef.
  4. Cook the beef: Add the marinated beef slices in batches to avoid overcrowding the pan. Cook each batch for 2–3 minutes per side until the beef is well caramelized and cooked through.

  • If Asian pear or red apple is unavailable, honey or sugar can be used as a sweetening substitute, but the fruit adds a unique tenderizing effect and flavor.
