Description

This Keto White Chicken Chili is a creamy, comforting, and flavorful low-carb soup perfect for chilly days. Made with shredded chicken, green chiles, cream cheese, and a blend of spices, it offers a rich and hearty meal that fits perfectly into a keto diet. The chili is simmered slowly on the stovetop to meld the flavors and develop a thick, satisfying texture.

Ingredients

Main Ingredients

  • 1 tbsp Olive oil
  • 1 small Yellow onion, diced
  • 4 cloves Garlic, minced
  • 4 cups Chicken broth, reduced sodium
  • 1/2 cup Heavy cream
  • 1 (4-oz) can Green chiles, diced and drained
  • 1 tsp Cumin
  • 1 tsp Dried oregano
  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Sea salt (to taste)
  • 1/2 tsp Black pepper (to taste)
  • 8 oz Cream cheese, at room temperature and cut into small pieces
  • 1 cup Mexican blend cheese, shredded
  • 4 cups Shredded chicken

Instructions

  1. Sauté Onion: Heat olive oil in a Dutch oven over medium heat. Add the diced onion and sauté for 5-7 minutes until it becomes soft and translucent, creating a flavorful base for the chili.
  2. Add Garlic: Stir in the minced garlic and sauté for an additional 1-2 minutes until fragrant, being careful not to burn it to maintain a sweet garlic flavor.
  3. Simmer Soup Base: Pour in the chicken broth, heavy cream, drained green chiles, cumin, dried oregano, cayenne pepper (if using), sea salt, and black pepper. Bring the mixture to a boil, then lower the heat to medium and let it simmer for approximately 40 minutes, allowing the soup to reduce and thicken slightly.
  4. Incorporate Cream Cheeses: Reduce the heat to low. Stir in the cream cheese and shredded Mexican blend cheese until fully melted and the soup becomes smooth and creamy, enhancing its rich texture.
  5. Add Chicken and Final Simmer: Mix in the shredded chicken and let the chili simmer on low for about 5 minutes, ensuring everything is heated through and the flavors meld. Taste and adjust seasoning with additional salt and pepper as desired before serving.

Notes

  • For thicker chili, simmer longer to reduce liquid further.
  • Use leftover rotisserie chicken for convenience and added flavor.
  • Adjust cayenne pepper quantity to control the heat level.
  • Serve topped with fresh cilantro, avocado slices, or a squeeze of lime for extra brightness.
  • This chili freezes well; cool completely before freezing in airtight containers.
