Description
These keto Oreo chaffles are a delicious low-carb treat combining crispy chocolate waffles with a creamy mascarpone filling. Made with black cocoa powder, mozzarella, and cream cheese, these chaffles are perfect for a quick keto dessert or snack with only 4.4g net carbs per serving.
Ingredients
Chaffles:
- 1 large egg
- 1 large egg white
- 2 tbsp cream cheese (30 g / 1.1 oz)
- 1/2 cup grated mozzarella (57 g / 2 oz)
- 2 tbsp black cocoa powder (18 g / 0.6 oz) or raw cacao powder or Dutch process cacao powder
- 2 tbsp coconut flour (16 g / 0.6 oz)
- 4 tbsp granulated low-carb sweetener such as Erythritol or Swerve (40 g / 1.4 oz)
- 1/2 tsp gluten-free baking powder
Filling:
- 3/4 cup mascarpone cheese, at room temperature (180 g / 6.4 oz)
- 1/2 tsp sugar-free vanilla extract
- 2 tbsp powdered Swerve or Erythritol (20 g / 0.7 oz)
- 2 tbsp heavy whipping cream (30 ml)
Instructions
- Preheat & Prepare Batter: Preheat your mini waffle maker. Begin by blending the whole egg, egg white, grated mozzarella, and cream cheese until smooth. Then add the dry ingredients—black cocoa powder, coconut flour, and gluten-free baking powder—except the sweetener, blend again, and finally stir in the sweetener manually to combine well.
- Cook Chaffles: Pour approximately 60 g (2.1 oz) of batter into the preheated mini waffle maker and cook for about 3 minutes or until the waffle is crisp and cooked through. Remove carefully with a spatula.
- Cool Chaffles: Let the cooked chaffles rest for 15 seconds in the waffle maker, then transfer to a cooling rack or plate and let cool completely. Repeat until you have 4 chaffles.
- Make Filling: While chaffles cool, place mascarpone cheese and sugar-free vanilla extract in the bowl of a mixer fitted with a whisk attachment. Whisk on medium speed for about 2 minutes until softened and creamy.
- Add Sweetener and Cream: Gradually add powdered sweetener and heavy cream one tablespoon at a time, alternating, until fully incorporated and the filling is smooth and fluffy.
- Assemble Chaffle Sandwiches: Pipe or spread the mascarpone filling evenly over one chaffle, then top with another chaffle to form sandwiches.
- Storage Tips: Store separate components in the fridge for up to 3 days. For longer storage, freeze chaffles with or without filling for up to 3 months. Chaffles frozen with filling create an ice cream sandwich-like treat.
